Women Tell All – Ugh

I wasn’t sure I wanted to bother blogging about last night’s WTA. However, something happened that I felt like I needed to comment on. If you watched all season, you know Onyeka and Nicole did not get along. Of course, it was addressed last night. Nicole said she felt like she was bullied by Onyeka. Other girls were quick to jump in and say “That wasn’t bullying” and “That is not the right word to describe what happened to you.” What bothered me about that was they were basically telling her she had no right to feel that way and disregarding how she felt hurt. I don’t believe anyone has the right to tell someone they’re wrong if they say they’re being bullied. That’s how THEY feel regardless of how the bully in question feels. Instead of saying “I’m sorry you felt like I bullied you. That wasn’t what I thought I was doing” Onyeka stuck to her guns and didn’t think what she said or did was hurtful. Even if Nicole wasn’t 100% innocent, she obviously is very sensitive and doesn’t have the same exterior as Onyeka. Not one girl came to her defense and that was upsetting. This entire group of girls just felt very negative to me as a whole. I know the show isn’t intended for a group of people to make friends but every season it happens, even with the guys. I was going to compare the WTA to a catty 10-year high school reunion but majority of those girls graduated maybe 5 years ago!

Usually I don’t like any of the Bachelor villains. For some reason, I love Demi. I think she was more of a “harmless villain” whereas her fault was lack of maturity. I get the feeling she didn’t have the best role model for a mother and has this wall up when it comes to anything serious. I think the way she acts is not necessarily a mask but just how she chooses to hide any vulnerability. I think she has a lot of growing up to do but I do wish her the best in life and hope to see her on Bachelor in Paradise. Side note: Courtney seriously brought a PACIFIER to the show but in the same breath said Demi had the maturity of a 3-year-old? Interesting.

I keep hearing rumors that Hannah B. will be the next Bachelorette. If she is, I highly doubt I will watch. She’s just not someone I see as a good fit for it. Just because she was talked about a lot this season, I don’t think that makes her a “fan favorite” enough that America is rooting for her and her journey to find love {if that makes sense?}. There are actually girls from other seasons I see as a better fit {Kristina, Danielle M., etc.}. I’m not sure why they think Hannah B. is the best option.

The Bachelor: Fantasy Suites…?

Normally I don’t watch The Bachelor live and wait till my kids are asleep and watch the recording so I can fast forward through commercials. I couldn’t wait and wanted to avoid seeing spoilers on the internet since everyone would be talking about “the fence.”

I was surprised that they decided NOT to show Colton showering at the beginning of this episode. Especially since this was the Fantasy Suite episode. Maybe they figured he’s clean enough by now? Who knows.

I’m still trying to wrap my head around what happened. Normally, I break down what happened on each date but I don’t feel that’s necessary this time. I will say that this was the first time I felt no spark between Colton and Tayshia. I usually see their great chemistry with some sexual tension but this time I didn’t. I’m sure nerves played a big role but I got the feeling if she was the one he was in love with or close to it, he would’ve been more flirtatious as opposed to playful. I found their date to be a bit of a snoozefest. At one point I found myself paying more attention to those beautiful views in Portugal. If that were me, I’d be begging the producers let me have my phone so I could take pictures. On the “dinner” portion of the day {I used quotes because I swear people on this show never eat}, I still just felt nerves from Colton and more of a friendship vibe than a romantic vibe. I didn’t ever think she would be the one he picks, but I didn’t realize the biggest indicator would be who he chooses to sleep with. Part of me wondered if he’d test his sexual chemistry with all 3. When he told Tayshia “I appreciate you”, that made me believe he doesn’t love her but does see her as a great friend. By him not having sex with her, was a very telling way to indicate she was going home.

Now to Cassie. Oh, Cassie. I almost feel like a disappointed mother. From the very beginning, Cassie was my favorite. I’ve been so happy every week seeing her stay and felt defensive when her intentions were called into question. I always felt she was falling for Colton the entire time. Last week threw me for a loop but I figured this week would change. I found her to be very frustrating and confusing last night. When her dad came to talk to her, I first thought that maybe he was there to say he thought about it and wanted to give his blessing. After Cassie got upset after hearing he didn’t give it to Colton, I assumed that was the editors’ sneaky way of foreshadowing. Colton, in previous episodes, kept making a point to say he couldn’t choose a girl that didn’t feel the same way and didn’t have her father’s blessing. Cassie didn’t give EITHER last week but he still chose her. It was VERY telling for him to say not having her dad’s blessing didn’t matter to him. Usually the editors’ try their best to hide any indicators of who gets picked by doing whatever they can to throw us off. Here they were showing very important details and clues. WHAT!? Colton even referred to her as his girlfriend on the date. I don’t know if that’s EVER happened on this show. It also upset me to hear Cassie didn’t know if she could get there with Colton and wished she had “more time.” {Honey, have you SEEN this show before…?}

My heart truly broke for Colton. He went into the evening thinking it would go one way when it couldn’t have gone more opposite. Is it bad it crossed my mind “Guess Hannah isn’t getting a date?” I mean, here he is laying it all out on the table that Cassie is the one he loves, thinks about only her when he’s with the other girls, will continue to fight for her, etc. It was just a CRAZY situation all around. Am I alone when thinking the most hurtful statement to hear during a breakup is “I hope you find someone that bla bla bla” or no? When she said that it pinched a nerve as I’m sure it felt like a punch in the gut to Colton. I thought it was kind of insensitive of her. It made me put into question if whether or not the rumor about her wanting to be the next Bachelorette was true or not, honestly. She signs up for the show, assuming she knows it’s designed to date someone for a couple months and hopefully ends in an engagement. Again, I’m assuming that was her end goal. I totally get it’s a short amount of time to get to know someone before getting engaged. Also, not even a proposal guarantees the relationship will last so I can’t knock her for having concerns. However, I got the feeling last night she didn’t WANT to let herself fall for Colton. She just kept saying “I don’t know” and “I wish I knew.” Like Colton said, she never gave any signs she wasn’t falling for him {other than not saying it}. I feel like she kind of lead him on, in a way. She kept fighting against what Colton was saying. I mean, he was shaking like a leaf professing his love to her and she couldn’t even get emotional until she LEFT? Ouch, Cassie. I don’t think she should’ve gone on the show if she doesn’t believe a couple months is long enough to know for sure you’re ready to accept a proposal.

It’s been 84 years but he finally hopped the fence. Obviously, he’s okay but YIKES. I never would’ve guessed Cassie would be the cause of it. I am really anxious to see what happens and it sucks we have to wait a week. Women Tell All looks very dramatic, too. Will you be watching??

This Week’s Dinner Plan

Ever since I started writing down a weekly dinner plan, I feel like it’s made life so much easier. Instead of trying to decide every morning what to make, I just look at the chart as I grab my coffee creamer and it’s already decided. It also gives me a chance to marinade meats or do any necessary prepping. I’ve had so many nights where I’ve had to resort to anything easy because the day got away from me and completely forgot to prepare anything. Something as simple as writing out a plan makes all three difference.

Today we did our grocery shopping and bought our meat and produce in bulk. Here is the dinner plan for this week:

MONDAY: CHICKEN PARMIGIANA 

TUESDAY: POT ROAST W/ POTATOES AND CARROTS; CORNBREAD CASSEROLE 

WEDNESDAY: APPLE GLAZED PORK CHOPS W/ VEGGIES AND BERRIES

THURSDAY: GREEN CHICKEN ENCHILADAS W/ BEANS AND RICE

FRIDAY: BEEF STEW

SATURDAY: LEFTOVERS

SUNDAY: KABOBS 

My husband and I alternate weeks on deciding what we’ll eat for the week. We always include one or two nights for leftovers. It helps us keep the fridge cleared out, not waste any food, and sometimes it’s just nice simply not having to cook or have extra dishes to do. Depending on the meal, the leftovers get used for lunch, too. Lately I’ve been wanting to try different recipes since I feel like I make the same meals too often. Food Network and Pinterest offer great ideas! What meals are popular in your house?

 

Homemade Bread Recipe

Just like Oprah, I. LOVE. BREAD.

Homemade bread is something I love but never thought I could make it without a bread machine. I used the last of our grocery store bread to make sandwiches yesterday and got the idea to look up bread recipes while I was up late browsing Pinterest. Surprisingly, there were so many recipes for bread you can just simply bake in your oven without a bread machine. SOLD! The weather here is still cold and snowy and I figured today was a perfect day to bake bread. This recipe is so easy I memorized it!

INGREDIENTS:

1 cup warm water

2 tsp active dry yeast

2 tbsp white sugar

1 tsp salt

2 1/2 cups all-purpose flour

1/4 cup vegetable oil

DIRECTIONS:

In the bowl of a standing mixer, mix the water, yeast, and sugar. Let stand for 10 minutes. Add flour, oil, and salt and mix {knead}. Cover and allow dough to rise in a warm area for 1 1/2 hours. Form dough in a greased loaf pan and let dough rise for an additional 20 minutes. Bake in oven at 350° for 30 minutes.

After I took the bread out of the oven, I couldn’t wait to try it. I cut an end off and spread butter on it. HEAVENLY. I added beef stew to my meal planner this week just so I can eat a slice {or 3} of this bread drenched in it. This was my first time ever making homemade bread and I’m so happy it turned out. I hope you try it and love it as much as I do. It’s too easy not to! 😉

 

Bachelor Recap: Hometown Dates

I’m surprised to see this season is almost over when it feels like it just started. Hometown episodes can either be a snoozefest or very dramatic. I thought this one was a mix of both. Three out of his final 4 are actually the ones I thought he’d pick.

One thing I have to point out is…. …why are they always filming Colton in the shower? Did he lose a bet or are we gonna be seeing him in some kind of shower gel commercial soon? I don’t get it.

CAELYNN:

I thought her hometown in Virginia had a lot of pretty scenery, I must say. But I thought the horse drawn carriage was a little unnecessary. I noticed right away that when they got to her parents’ house, Colton seemed uncomfortable. I couldn’t tell if it was that or if it was just nerves. While the family was chatting outside by the grill, he and Caelynn were kind of off by themselves. Did anyone else notice he said “I’d like to make a cheers and say toast?” That was another indicator to me that he wasn’t 100% happy or comfortable being there if he is mixing up his words. I thought the talk with Caelynn and her dad was really sweet. I think he’d be a great father-in-law. My biggest takeaway from their date was Colton didn’t give her any indication he loves her back, and she was the only one.

HANNAH G.

I just had to think to myself “What’s her name again?” Lol. I have liked Hannah but also find her a little boring and forgettable. I don’t remember too many things about this date but when her sister asked “Does it bother you that he is a virgin?” If my sister brought home a guy that she might end up engaged to, his virginity would be the least of my concerns. At the same time, it made sense to me. In episode 1, I feel like Hannah was practically front & center. She got the First Impression rose and everyone could see their undeniable chemistry. As this season has gone on, I haven’t seen much of a spark between them. That could just be editing, but if there was more there on a romantic level, I feel like they would’ve aired it. Hell, last week they didn’t show her talking to Colton at all on the group date but she still got a rose. Did he do that knowing he could just send her back to the hotel and get more time with Cassie? Back to my point, though. Their one-on-one seemed almost purely physical. Very steamy, even for a TV show. A big part of me thought he might lose his virginity that episode. When they sat down to talk, I didn’t feel like there was much between them. I can’t even remember what she brought up but I do remember laughing at the fact that Colton seemed happy she opened up, even over something so random. At this point, between what her sister asked and her “insert Colton/Hannah makeout session” makes me wonder if she is secretly a floozy and is after his virginity more than an engagement.

TAYSHIA:

After last week’s episode, I can’t help but see Tayshia in a different light. I’m hoping he doesn’t pick her even though they have a great connection. He seemed to have fun skydiving and they always look like they’re having fun. Sometimes I look at them as just being friends but then I see the romance, too. Out of all the dads, hers was my favorite. I appreciate the parents who are skeptical and aren’t caught up in the fantasy that is The Bachelor. They’re not emotionally involved so they are able to be level-headed and ask the tough questions. In the real world, when a girl brings home a guy after knowing him for less than a couple of months and mentions the idea of a proposal, red flags are everywhere. I wasn’t sure her dad would give his blessing. I just know for certain that if my daughter brought home The Bachelor and he asked my husband for his blessing to propose, my husband would be kicking his ass out the door. Lol! It’s so funny to me that the question is basically “If I’m still with your daughter next week, can I have your blessing to possibly propose to her?” I can’t believe ANY of those dads were okay with that. I understand Colton wanting their blessing but I just don’t agree with the timing and the way he had to ask.

CASSIE:

I’m so glad she’s still there. She has been my favorite all season. What I like about their relationship is it’s a perfect mix of what every relationship needs. Fun, laughter, love, chemistry, sexual chemistry, etc. It’s not one note. Colton also lights up around her the most, in my opinion. I am surprised, however, that she doesn’t seem to be on the same page with Colton. She defended herself so greatly last week and seemed truly hurt that her intentions and feelings were questioned. It kind of upsets me that she didn’t say she’s falling in love with him. I appreciate the realness of it, but usually guys send home the girl who doesn’t reciprocate her feelings by now. Not only that, her dad didn’t give his blessing. After she received her rose, a lightbulb went off in my head. I think the producers wanted us to believe she would be sent packing after Colton kept saying he couldn’t propose without their father’s blessing. My prediction is he kept Cassie, even without a blessing or reciprocated feelings, because deep down he knows she’s the one he wants. I think during the finale, he will call her dad back up and say “She’s the last woman standing. Can I get your blessing before I go propose?” Okay, maybe not in those words but you get what I mean.

ROSE CEREMONY:

Even though I’m glad Cassie stayed, my heart broke for Caelynn. I realized that she’d be getting sent home after he didn’t say he was falling in love with her yet he said it to the other 3 girls. I didn’t see her being chosen but I thought she’d at least be final 3. They’ve had chemistry all season and I’ve read so many people predict she’d be the one Colton picked. Last week she had to spend their time defending herself and I wonder if that effected his decision. However, I felt like he wanted her to express her feelings and convince him she wants to marry him. Like I said last week, he smiled so big when she shared her vision of their future together. I thought that meant he saw that with her, too. Something tells me she might be the next Bachelorette.

Next week he FINALLY jumps the fence!! But that was a confusing, jumbled up preview if I ever saw one. Why was Cassie crying in a car? Why was he hugging Tayshia and crying? Who does he lose his virginity to? That’s another point I have to add. I’m assuming Colton wants to actually lose his v-card {do people still use that term?} to the girl he really wants to propose to. So if he loses it to the first girl he’s on the date with next week, is that a give away to who he picks? That would SUCK to be the girl chosen yet he didn’t lose his virginity to her. Talk about AWKWARD.

Marriage: Reality vs Fantasy

I felt the need to share my thoughts on the trending topic that is Bradley Cooper & Lady Gaga.

I decided to watch the Oscars last night and I was most looking forward to watching them perform {I still have yet to see A Star Is Born}. As I was watching them, I admit the chemistry was great. However, I couldn’t browse the internet or social media without reading comments from people ranging from “She should’ve kissed him and I would’ve been so happy” to “Nobody can fake that chemistry. They’re totally in love.” Did it occur to these people that they did a movie together and can ACT really well? What if every single couple in every movie/TV show out there with great chemistry stayed together or ended their relationships just to be together? 🤨 Not only that, but people were saying “I feel so bad for his wife” {they’re actually not married but have been together since 2015} almost in a laughing matter. Lady Gaga recently ended her engagement  which has many crossing  their fingers Bradley will take that as an opening.  Whenever we hear about famous people cheating on their significant other {example: Khloe & Tristan}, people don’t hesitate to put their two cents in and say what a scumbag the cheater is. Now here we are rooting for infidelity or for a family to be broken up over this fantasy couple?? What the hell is wrong with our society today??

It really bothers me when people forget that celebrities are just as human as you and me. They pay bills, they shit on the toilet, they eat dinner, and they have relationships. Not all of those relationships last. Not all of them stem from being in movies/shows together. Imagine being happily married to/ together with your partner then constantly read about people wishing for your spouse to be with someone else. It’s got to be hard enough watching your man kiss another woman and be almost fully naked together, but to read that many wish it were real has got to be gut-wrenching. For some reason, being famous makes that different than an average Joe doing it. I’m trying to understand why so many fans/people get so caught up in a fantasy of a fictional couple becoming real. I can even admit I was heartbroken when Ryan Gosling and Eva Mendez got together and had a baby {WHY, RYAN!?} but not to the extent that it effected me and my everyday life. Is it a void people are trying to fill? I can’t figure it out.

All I can say is Bradley’s lady and his daughter deserve respect that every happy couple/family deserves. I hope people start to realize that.

Homemade Coconut Mocha Recipe

I have a favorite coffee drink for every season. For years, my favorite spring/summer drink was the coconut mocha frappuccino from Starbucks. Years ago, I used to live right next to a Starbucks so I went about every other day before work and sometimes after. I believe it was April when I went in one morning and asked the barista if she knew when they’d be releasing the coconut mocha. She looks at me and breaks my heart by saying “They’re not.” My eyes popped out of my head. I said “They’re not?? Why??” She said something about not ordering the syrup but didn’t know more than that. I know it’s just a coffee drink but I was so disappointed. Every year I would keep they’ll bring it back but they haven’t. Any time I browse their social media, I see people saying “Bring back coconut mocha!!” Maybe there’s hope??

About 3 years ago, it came close to spring when I was reminded I’d have to likely go another season without the drink. I decided to see if I could make my own. While it’s not the same as Starbucks, it was still delicious and satisfying.

INGREDIENTS:

1 cup coffee, chilled

Coconut coffee creamer of choice

Shredded coconut

Chocolate syrup

Ice

DIRECTIONS:

In a blender, combine coffee, a couple splashes of creamer, a tsp of shredded coconut, and about a cup of ice. On the inside of your glass, put in a little chocolate syrup either around the glass or just let it sit on the bottom. Pour the blended mixture into the glass and garnish with whipped cream, more chocolate syrup and some toasted coconut. If you don’t want it blended, nix the blender and just pour it over ice.

I’m glad that other local coffee shops carry their own coconut flavored coffee drinks, but I think the frappuccino will always be my favorite for this time of year. I still hold out hope they’ll bring it back one day. Fingers crossed!! IMG_20190219_221952_088

‘Bachelor’ Recap

This post might be all over the place since I’m writing strictly from memory lol. I’m not able to sit down for 2 hours uninterrupted to watch with 2 little ones, so my only option is to stay up late and watch.

At this point, I’d be surprised if Tayshia is not one of the top 2 or at least 3. She was never really on my radar in the beginning but as the season has gone on he is DEFINITELY into her. To be honest, most of the time during their date I kept thinking how cute her white sweater was, lol! What’s annoyed me the most about this season is all of the gossip and how Colton has a small role in it. It seems like instead of focusing on each girl individually, he spends a lot of time having the girls give him dirt about the others. I understand he’s just trying to make sure he’s keeping girls who are there for the right reason, but come on. Does he really think they’re going to say “Oh Susie says she loves you. Sally can’t wait to get engaged. Brittany is just so genuine.” Etc.  I’ve always seen in past seasons where the girl goes to the Bachelor saying “So & so isn’t here for the right reasons” and spends her time trash talking, she gets sent home. It’s almost the opposite here. Colton keeps taking these comments to heart rather than with a grain of salt. I actually liked Tayshia until this episode. Again, rather than focus on THEIR relationship she chose to bring down other girls. If she was 100% secure with what she has with Colton, I don’t think she would’ve done that. I noticed how she said she “had” to tell him. No, she didn’t. If it were me, I would’ve said “I’ve honestly been too busy thinking about our relationship and our possible future to be worrying about where the other girls are at. I have no information for you but all I can do is promise you I am here for the right reason.” I don’t know how he doesn’t see the gossip as a turn-off, to be honest. Hell, was turned off by it.

I genuinely felt bad for Caelynn on her date with Colton. I know there’s a lot of editing but it seemed like her entire date was spent defending herself and her intentions. She didn’t get 100% of Colton either because his mind was so focused on what Tayshia and the comments from 3 girls he sent home. I’m not sure why he’s so concerned with what those girls said but it kind of got on my nerves. From night 1 I think everyone could see their connection and was most likely a front-runner so it was surprising to see Colton question her intentions. I noticed he smiled when she mentioned the future she sees with him which told me he’s pictured it, too. I never thought he’d send her home but I think he wasted too much time even though he knew deep down he believed her.

What really got under my skin was Tayshia admitted that it was her “opinion” that Caelynn and Cassie weren’t ready for marriage and want to be the next Bachelorette. When she was talking to Colton, I was wondering why a conversation like that wasn’t aired. I thought “When was this said??” and figured it would’ve come from someone like Demi or Hannah B rather than Cassie or Caelynn. Basically, we learned she based what she said off of an assumption and nearly ruined 2 good relationships. And Kirpa? Who are you, again?? I’ve been surprised she’s lasted this long but again if she chose to spend her time spreading rumors, how does that make HER there for the right reason. I think she knew at that point she was going to go home but saw an opportunity to get herself further. It was so childish and annoying to watch. She also said “it’s my opinion” and “it’s not a lie” in the same breath. Like Cassie said, “It’s either true or it’s not.” And Kirpa and Tayshia admitted it was their opinion based on a reaction they didn’t like. I hope Colton watched last night and realizes Tayshia, who he trusted so much, was the liar in that situation and he almost gave up 2 awesome girls.

Oh, Hannah B. I’ve had mixed feelings about this girl all season. So mixed that I can’t really put it into words, lol. Some episodes I thought she might get chosen then others I thought she’d get sent packing. I wasn’t sure she’d stay much longer after the drama with Caelynn. I think she got the one-on-one strictly for Colton to get clarity with her. I had a feeling he knew she wasn’t the one which makes me confused as to why he wanted his family to meet her. I noticed when he asked her “What makes you ready for marriage?” and she answered it like a pageant question. Instead of saying “I envision us getting engaged, me moving to Denver, us planning our wedding, how many kids we’re gonna have” etc. Instead she made it seem like she is ready for marriage because that’s what you’re supposed to do at that point in her life. And like she is ready for marriage but not necessarily ready to marry COLTON. The whole good-bye felt awkward to me. I thought they were stronger in the sense that she’d be more devastated rather than “pissed off.” She just met his family and said she’s falling in love with him. Her reaction didn’t necessarily match, in my opinion. When she was listing everything he said he wants in a wife, it made me think back to when she ate the bugs and stuff on that group date. She was eating them to show she was adventurous and up for anything. That made me think this whole time she was being what she thought would win over Colton rather than being herself. I see her going on Bachelor in Paradise, for sure.

I was kind of bummed to see Heather go but not surprised, either. I thought her good-bye came a little out of nowhere, though. I think she knew she’d get sent home that night. I see her joining Bachelor in Paradise, too.

I thought it was very big of Caelynn to go to Colton and reassure him what he heard was all lies but at the same time wonder how much of that was encouraged by the producers. And the rose for Hannah? What was that?? Lol. Not that I’m at all surprised she got one but he brought her outside to give it to her then sends her back to the room? So weird.

I was hoping this episode was going to be the one where he hops the fence. They didn’t show it in next week’s preview either.

Meal Planning

I’ve never been one to consistently plan or prep my meals. In fact, I usually decide when I wake up and figure out what sounds good. Or I’ll get ideas from watching The Pioneer Woman. A couple of weeks ago she made this cheeseburger meatloaf and I made it the next day because it looked so delicious.

It makes my life so much easier when I plan ahead for dinners. If I get a chance, I’ll make sauces or marinade ahead of time. Last week while my kids ate their lunch, I went ahead and made the lasagna I planned. I love lasagna but it can get overwhelming trying to tend to 3 different pots/pans on the stove then assemble the dish while tending to 2 kids. I covered it with foil then refrigerated it until dinnertime. All I had to do was put it in the oven and it made such a difference. I was able to get ahead of dishes/clean up and have more time with the kids. My husband also isn’t usually home for dinner with us so prepping helps me A LOT.

I found a free printable on Pinterest for a meal plan sheet, colored & laminated it, and have it hanging on the fridge. I use dry erase markers to fill it out and erase it all at the end of the week. Easy peasy!

For lunches I typically feed the kids leftovers or make some kind of sandwiches with sides. A few of their favorites are string cheese, strawberries, pretzels, and cuties.

Here is my meal plan for this week. I like that this plan sheet also includes space for me to write down groceries we need. I get most of my ideas from Food Network, Pinterest, or repeat and tweak our favorites from over the years. I hope this helps you!!

Chicken Enchilada Soup Recipe

I had this on the meal plan and it happened to fall on a cold/windy/cloudy day. That’s my favorite kind of day to make soup.

This is a slow cooker soup but you could make it on the stove, if you wanted. Usually when I make chili, throughout the day I’m adding extra seasoning but the flavor of the enchilada sauce {used as the base} is so great there’s no need to add extra flavor. I usually use chicken breasts then shred them about an hour before it’s done. I’ve been such a space cadet the past few days that I forgot to take the chicken out of the freezer. Luckily, I had 2 cans of chicken left that I bought to make buffalo chicken dip.

INGREDIENTS:

2 boneless, skinless chicken breasts {or thighs}

2 cups enchilada sauce {I used homemade}

2 cans black beans {drained}

1 can whole kernel corn

1/2 cup diced yellow onion

1 cup Mexican Blend shredded cheese

DIRECTIONS:

Put all the ingredients in the slow cooker on low for 6 hours. After 6 hours, take chicken breasts out to shred then put back in. Stir and add shredded cheese. Cover and cook for 1 more hour. I like to garnish with sour cream and avocado but you could also use tortilla strips, cilantro, lime juice, etc. Enjoy!!
